"Aimee Lagos [of Hygge & West] reached out to us unexpectedly, but we were already familiar with the great work of her company because we have Hygge & West on the walls of one of The Bachelor Farmer's private dining rooms," Eric Dayton tells CH.
That is to say that co-owners Karl Benson and Marie Dwyer are taking a to-be-determined form of their patented blend of cooking school and retail shop to the city's hottest restaurant neighborhood. "A sort of best-of-all-possible-worlds is how we're looking at it," said Benson.
The spaces and details at the Bachelor Farmer have always been so heartbreakingly beautiful and precise, the entire place is like an art piece: afghan "wallpaper", silver toast caddies, Moleskins for check pockets so diners can leave pithy comments and love letters for cute servers. The design details are unmistakably big budget, yet they still seem to want to say: "aw, shucks."
